about The Fair Weather Foundation
The Fair Weather Foundation is dedicated to preserving the historic S.V. Fair Weather, the last Caymanian-built wooden sailing schooner still afloat. Built in 1947 by Caymanian craftsmen, this iconic vessel once circumnavigated the globe, carrying the spirit of the islands across the seas.
Through apprenticeships in traditional shipbuilding, educational sailings, and plans for a maritime museum in George Town, the Foundation is ensuring the island’s maritime traditions live on while offering opportunities for the community to connect with and support this important piece of Cayman’s history.
With every purchase of our signature ship bottle, you directly support the Fair Weather Foundation in restoring the Fair Weather.

This rich, full-bodied golden rum is bottled at our distillery and captures the golden essence of the islands, making it perfect for sipping neat or elevating your favourite cocktail.

This smooth, mellow rum is a lighter-bodied variant that offers a clean, crisp finish, making it ideal for easy drinking or mixing into refreshing Caribbean cocktails.

Tortuga started producing its first Cayman-made rum in 2018. Realising Robert Hamaty's dream, the company built distilleries at its stores in Seven Mile Shops and West Bay. Visitors get a literal window into the production process. The distillery, behind a large glass window, can be seen from the shop and tourists can learn how rum is made and bottle their own to take home.
